Making Homemade Wine – The Micro-Winery
Making homemade wine is a passion for those who are tired of paying higher prices at the supermarket.Although, wine making is a very serious undertaking, and for the people who use only the finest ingredients. These people use wine making recipes that have been used for generations.What you probably did not know is these recipes are surprisingly easy. While the method of making wine is a simple one, waiting until you can drink it takes patience. Do you have an interest in the instructions on how to make wine?Can you follow the instructions of a recipe, and be patient enough to wait until the wine matures? Then get ready to brew this recipe for Concord wine that will knock you socks off.
Items to gather
5 gallons of Concord wine can be made from this recipe, and the following items will need to be purchased. The items that you need are a wooden stirring spoon, a fruit press, a six gallon fermentation tank with a screw on lid, a hose for siphoning, a 5 gallon wine barrel, and nylon mesh bag. The ingredient items that you will need are, 1 gallon of water, 1 tsp of wine tannin, 1 tbsp acid blend, ¾ tsp peptic enzyme, 2 tbsp winery yeast, 6 ½ lbs. of sugar, and 40 lbs. of Concord grapes.
Making the wine
Wash and pick the grapes discarding all of the stems and any bad fruit that is discovered. Crush the Concord grapes using the electric juicer and pour them pulp and all, into the fermentation tank that has been lined with the nylon bag. This crushing process will need to be repeated until all of the grapes have been crushed. When all the grapes have been crushed, tie up the nylon mesh bag and squeeze all of the juice from the pulp into the fermentation vessel. The next step will be to add the nylon mesh bag of grape pulp and all of the ingredients to the fermentation vessel with the exception of the sugar the water and the winery yeast.Bring the water to a boil on the stove and add the sugar to dissolve it, and set aside until it cools down to 75 degrees. When the sugar and water has cooled down add it to the poly-fermentation tank, screw the lid on, and let it stand for a period of 24 hours.
Making the wine
When the 24 hours have passed, open the vessel and stir into the mixture the winery yeast. The nylon bag of pulp will also need to be squeezed to release the juice in the fermentation vessel. Over a period of the next five days, open the fermentation tank and stir the wine with a wooden spoon daily. When the fermentation process ends after the 5th day, open up the fermentation tank, and remove the pulp in the nylon bag and discard. Then wait for 24 hours and siphon the juice from the fermentation tank into the 5 gallon carboy. Careful consideration needs to apply to siphoning the wine from the fermentation take to avoid the sediment at the bottom of the vessel. Add more water if needed to completely fill the carboy to the neck and store in a cool dark area undisturbed. The wine should be ready to bottle in two months and while you can drink the wine at that time, it is best to let it age for two years.
